set up tax categories first
in the suite settings, define your tax categories — name + rate. you do this once.

open a product and pick a tax category
the product dialog has a "tax" tab. pick from the categories you set up.

the rate flows to the invoice
when the product is on a pawpaw invoice or mayhaw quote, the right tax rate calculates automatically per line — even if the cart mixes categories.
tip
for shops where everything's the same rate, set a default tax category — every new product inherits it without the extra click.
