phone or email is the lookup for future stamps — pick whichever they're more likely to give consistently.

they start at zero punches and earn them as they come back. their card is now in your member list — search by name, phone, or email anytime.
tip
phone tends to beat email for in-person businesses — easier to type at a counter, less likely to be a one-they-don't-check throwaway.
